Squirrel Dumplings

~ 3 squirrels, cut up (All hair and shot removed.)

~ 1 egg

~ 2 cups plain flour

~ 3/4 cup broth

~ 1 teaspoon salt

~ salt and pepper

Boil squirrels in four quarts of water until tender. Remove squirrels from broth, let cool, then remove meat from bones. Set aside.

In large bowl, mix flour, egg and one teaspoon of salt with 3/4 cup of broth and roll into ball.

Strain the broth to remove any stray shot then resume boil. Return meat to boiling broth.

On a floured cutting board, use rolling pin to roll the dough ball to a thickness of 1/16 inch. Cut into 1-inch wide strips and drop strips one at a time into the boiling broth. Gently shake pot after last dumpling is added to prevent sticking.

Cook approximately 10-15 minutes until dumplings are tender. Salt and pepper to taste.

Serve and Enjoy!

Echoes in Appalachia is a story of my journey of life while growing up, growing old, and living on Rattlesnake Ridge in Central Appalachia. My blessings have been extraordinary to include both the roots of ancestry here and the wings of getting to know and befriend people from many different places and cultures. It is the enthusiasm and support of these "outsiders" that have inspired me to share my secret treasure of life here in McCreary County, Kentucky---A place where time pauses behind the pace of the rest of our great country. This compilation includes many photographs of the faces and places in Appalachia I've come to know and love. My deepest thanks goes out to Paul Hassell for his inspiring photographs. Every effort has been taken to ensure accuracy in the telling of these stories. If any errors have occurred, I apologize in advance for a less than perfect memory. Also, many of the names and inconsequential facts have been changed to protect the identity of my amazing mountain friends.
